a strip of orange or lemon zest

1 tablespoon chopped fresh dill, tarragon or chives or 1 teaspoon dried herbs

600 ml (20 fl oz) hot vegetable stock

4 tablespoons white wine

1 fennel bulb, sliced thinly (optional)

225 g (8 oz) skinless salmon fillets, cut into 8 chunks

225 g (8 oz) skinless haddock fillets, cut into 8 chunks

4 tablespoons half fat crème fraîche

salt and freshly ground black pepper
